CountingDown has some news about how the Quidditch matches are being filmed:

Word from ILM who are doing Harry Potter’s Quidditch match. They spoke about it in a recent Australian SFX convention:

The quidditch match is going to be awesome, with a mix of CG and live action.

The match will be created with greenscreen technology / live action for foreground play and closeups, and all the distant shots will be entirely CG.
