Ingredients

3 tablespoons margarine

1 1/2 cups (340 g) sugar

2 eggs

1 egg, separated

1 teaspoon lemon juice

2 1/3 cups (529 g) flour

2 1/2 teaspoons baking powder

1 1/4 teaspoons cinnamon

1/4 teaspoon salt

1/4 teaspoon nutmeg

1/2 cup (113 g) walnuts, finely chopped (optional)

Servings

Makes 6-9 dozen cookies depending on the size of the cookie cutter.

Instructions

Mix the butter, sugar, 2 whole eggs, 1 egg yolk, and lemon juice until fluffy.

In a separate bowl, stir the dry ingredients together.

Blend into the sugar mixture.

If using walnuts, stir them in.

Divide the dough into 3 pieces and use a rolling pin to roll 1 piece at a time to 1/16 inch (0.16 cm) thick on a lightly floured board.

Cut the rolled dough with a star-shaped cookie cutter.

Beat the remaining egg white until frothy, then brush the tops of the cookies with it.

Bake cookies at 375°F/190°C on a lightly greased baking sheet for 6-8 minutes, or until golden brown.
